Sourdough is a slow fermentation of dough using a starter culture of wild yeasts and bacteria. The diverse mixture of bacteria and yeasts in the strater culture gives the bread its unique flavor, texture and aroma. Humans have relied on sourdough starter microbial communities to make leavened bread for thousands of years, yet we are only beginning to understand the science of it. 

In this workshop, let’s don our lab coats and chef hats to explore the science of this extraordinary traditional recipe by experimenting with different flours, environment pH and more. We will also take a peek at our little microbial friends through a microscope.
