We've spent a while at SampoornaAhara experimenting with creating the most scrumptious cake possible without compromising on any of the health factors we hold dear. Level 2 - Making an alcohol-free cake at home, but with a cake mixture - Within India

Imagine the smells of cinnamon, orange, vanilla and toasted nuts filling your kitchen... Now enjoy our signature Christmas cake hot from your oven! Our cake mix is sugar-free, jaggery-free, media-free, oil-free and completely vegan.

All you need to add is some fresh date paste and orange juice and your choice of dry fruits to make an eggless fruit cake batter. Full instructions are given below.

Level 3 - Bake your own Rich fruit cake! - Anywhere in the world

The cake is very easy to make and doesn't require any special equipment. No special cake tin, in fact, we have had success making this in a pressure cooker, no need for an oven even!

If you are using an oven, do remember to have a preheated oven for the best results. Also ensure you are using greaseproof paper/parchment paper or a silicone mold to be able to remove your cake easily from the cake tin.

Filled with dry fruits, nuts, and strong aromatic spices this spongy cake is a treat to the senses. We have for you a recipe that combines the goodness of dried fruits, nuts and spices with whole grains, nut butter and date syrup! 'Tis the season to be jolly indeed!

Why do we not use sugar or brown sugar for our cakes?

We use a combination of fruit - orange juice, dates and dry fruits along with a some blackstrap molasses to make a delicious moist cake. We avoid brown sugar, white sugar, powdered sugar, honey or jaggery because they have a very high glycemic index. This means that they can raise your blood sugars very quickly along with the host of other issues that sugar brings with it.

By having our sweeteners from whole food sources, we are able to enjoy the complex flavours, dietary fiber and all the other nutrients that it provides.

Why do we not use all-purpose flour/plain flour or other refined flours?

Traditionally, the beauty of Christmas cakes and that they are dense, moist and absolutely packed with flavour! When you can enjoy all of these with the health benefits that whole grain flour offers, why not?

Feel free to substitute some of the flour in these recipes with ground almonds
