Ingredients
2 ¾ cups Whole Wheat Flour
1 cup date powder
1 cup date paste
1 tsp aluminium free Baking Powder
1 tsp Baking Soda
1 Tbsp Ground Flaxseed Meal
3 Tbsp Hot Water
⅔ cup Almond butter

Preparation
You will need a pressure cooker, some sand to cover the cooker’s base, and a cake pan.
Use a silicon cake pan to ensure it is easy to remove your cake from it.
Egg Substitute
Combine one tablespoon of flaxseed meal and three tablespoons of water and allow to sit for 5 min. (Equivalent of 1 Egg)
Making the cake batter
In a large bowl, add the almond butter, vanilla and date paste to the flaxseed mixture and mix well until there are no lumps.
Add the whole wheat powder, date powder, baking soda, aluminium-free baking powder and a pinch of salt.
Mix the batter without lumps so that cake comes out a soft and spongy texture.
Pour the cake batter into the cake pan.
Remove the air bubbles by tapping carefully.
Take a pressure cooker. Into it, add sand all over the base and spread it evenly. You can also use salt in place of sand. (this is just to separate the cake pan from direct heat).
Invert a cup or a rimmed plate over the sand to make a makeshift stand to place your pan.
Place the cake pan inside the pressure cooker carefully.
Cover the lid of the pressure cooker but do not use the whistle.
Cook on a medium flame for 10 minutes.
Cook on low flame for 50-60 minutes.
Switch off the flame.
Check whether the cake is done with the help of a toothpick, if it comes out clean without any cake sticking to it then the cake is perfectly cooked.
Take the pan out of the cooker, and cool it down.
Invert the pan and carefully lift the pan.
The cake separates perfectly from the pan. Perfect pressure cooker cake is ready.
Now the cake is ready to eat!
