Filled with healthy nut butters and crunchy cashew and almond pieces, this mix doesn't need any oil added. All the sweetening comes from dry dates powders, dry fruits and fruit juice. Here's a treat that you can enjoy without any guilt at all!
Congratulations on choosing plant-based! We hope you enjoy making your own healthy Christmas Cake. Here are the steps you can follow to make your flavourful treat.
1. In one cup, soak 80-100g of mixed dry fruits of your choice in 200ml of fresh orange juice (For an added health benefit, remove just the peel and seeds and grind the orange to make juice so that the fibre of the fruit is also used). Soak overnight in the fridge or for 2-4 hours at room temperature. 2. In a second cup, soak 45g of seedless dates with 45g of water (3tbsp) for 1-4 hours and then grind to make date paste. 3. Mix and Bake! We recommend 160 degrees for 45 min. Please adjust according to the performance of your oven. We have also enjoyed steaming the cake in a closed vessel or using the pressure cooker as an oven. Optionally, top with extra nuts before baking.
Though I do not encourage fortified food, however, the goodness of flaxseeds with dates and cocoa flavour (subtle) is delicious strong anti inflammatory food. If one can opt for non-fortified, would be very helpful.
The slightly dangling texture of the peanut butter when you open the jar or when you try to scoop out with a spoon shows its pure. You can still see minute crumbs of peanut which says its all natural ! Really love it for its purity. Thank you for this product.
