With just a few simple ingredients and minimal active time, you can make 1.3 kg of the tastiest jam in only 45 minutes.
All you need is some green or purple figs, date paste, lemon juice, and water. Start by tossing the figs into a nonreactive saucepan and stirring until it becomes juicy. Then add the lemon juice and water and boil until it thickens. Spoon the jam into glass containers with metal lids, seal them in boiling water for 2-3 minutes, and let cool. Your homemade fig jam will be ready to store for up to one month without opening!

Ingredients
Green or purple figs 1 kg
Date paste 1 ½ cup
Lemon juice ¼ cup and 2 tbsp
Water ½ cup
Directions
In a non-reactive saucepan(stainless steel works best), toss the figs (remove stem and cut into ½ inch pieces) and let stand on low flame and stir until it is juicy.
Add lemon juice and water and boil it until it turns thick - about 20 minutes.
Spoon the jam into two - three glass containers with metal lids, leaving ¼ inch of space on top.
Close the jar immediately.
Bring a large pot of water to the boil and lower the bottles into the boiling water for 2-3 minutes. Set aside to cool.
This seals your jam in the bottle and will enable it to store for up to 1 month without opening. Once opened, refrigerate and use within a week.
