The first step in making these oatmeal cookies is to mix together almond butter, mashed banana, and vanilla extract until creamy. Then add rolled oats, whole wheat flour, dry date powder, dry fruit, nuts, baking soda and salt to the same mixture and mix until combined. Once everything is mixed together well, use a cookie scoop to portion out the dough onto a lined baking tray. Sprinkle additional chopped nuts on top if desired before baking in the oven at 160°C for 15-20 minutes or until golden brown.

Dry date powder 1 cup
Mashed Banana 1 cup
Vanilla extract 2 tsp
Whole wheat flour 1½ cup
Baking soda ½ tsp
Salt ½ tsp
Rolled Oats 3 cups
Chopped nuts 3 tbsp
Dried fruit 2 tbsp
Directions
In a bowl add almond butter, mashed banana and vanilla extract and mix until creamy about 2-3 mins.
To the same mixture add rolled oats, whole wheat flour, dry date powder, dry fruit, nuts, baking soda, and salt and mix until combined.
Preheat oven to 160 ° C.
Use a cookie scoop to portion the dough and arrange it a few inches apart on a lined baking tray. Sprinkle additional chopped nuts on top if desired.
Bake until the dough turns golden brown about 15-20 mins, and repeat with the remaining cookie dough if needed.
Let cookies cool on the sheet pan for 5 mins and then transfer them to a wire rack and let them cool for a few hours.
