A simple, versatile cake recipe can be the beginnings of a wonderful dessert.
Add flavours, toppings, layers or even just enjoy this plain! Vanilla-flavoured mildly sweet sponge cake!
Whole wheat flour 1½ cup
Soy Curd 1 cup
Date paste 1 cup (soak 100g of dates in 100ml of water and grind smooth)
Flaxseed powder 2 tbsp
Aluminium Free Baking powder 1 tbsp
Baking soda 1 tbsp
Vanilla extract 1 tbsp
Almond butter ½ cup
Preheat the oven to 180 °C.
Keep aside a silicone mould.
Sift the whole wheat flour in a large bowl, add baking powder and baking soda.
In another bowl, mix together the curd, vanilla extract, almond butter, flaxseed powder and date paste. Mix well until smooth.
Whisk together the wet and dry ingredients until there are no lumps.
Pour batter into the previously prepared mould and bake for 30 minutes.
Let it cool fully and remove the cake from the pan.
